Favo Gazpacho

Serves: 4 – 6

1 packet ZZ2 Favo Vine Tomatoes, halved
1 small yellow pepper, seed removed and roughly chopped
½ cucumber, skin and seeds removed
½ onion or 4 spring onions (the white parts)
2 garlic cloves
3 Tbs (45 ml) white wine vinegar
½ tsp (2.5 ml) each of ground cumin, smoked paprika, turmeric and dried chillies
3 Tbs (45 ml) extra virgin olive oil
+- 125 ml chilled vegetable stock
Tabasco™ to taste
Salt and pepper to taste
To garnish:
Freshly chopped parsley
Diced ZZ2 favo and sante tomatoes

Place the favo tomatoes, yellow pepper, cucumber, onion, garlic, vinegar, spices and olive oil in a food processor or liquidizer and blend until it resembles puree.
While still blending, slowly add the cold stock to the mixture until you have reached the desired consistency. It should be drinkable and smooth.
Season to taste with Tabasco™, salt and pepper.
Serve chilled garnished with parsley and chopped tomatoes.
